Blueberries…A Superfood

Here in Jersey, we love our blueberries, and they are one of those foods that are great to fall in love with.  They contain more antioxidants than any other fruit; and antioxidants protect us from a range of diseases, including cancer.  They are also packed full of fiber, and vitamin C. 

When they are in season, I like to buy in bulk and freeze them, so I have a supply to last my family for months.  The easiest way I’ve found to freeze is layer a jelly roll pan with wax paper.  Wash and dry the berries, and arrange on the pan in a single layer.  Freeze for several hours, then transfer to a freezer bag. 

We use blueberries around here for all sorts of stuff, from fruit salads, to smoothies.  Add a handful to Greek yogurt to sweeten it up, or to oatmeal.  Blueberries make a great substitution for pancake syrup.  Heat berries and a couple tablespoons of water in a small saucepan until berries pop, then allow to cool and thicken.  You can also use them to make my Blueberry Banana Dream protein smoothie!

1/2 cup frozen blueberries

1 small banana

1 cup skim milk

1 scoop EAS Vanilla Protein

5 ice cubes

3 packets Splenda

1/2 teaspoon cinnamon

Pulse all together in a blender until smooth.  Enjoy icy cold!
