Pumpkin Raisin cookies


Moist pumpkin cookies that are delicious without being too sweet!

Cook time: 18 min

Yield: 36 cookies

  • 2 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/4 teaspoon salt
  • 3/4 cup Splenda brown sugar
  • 1 stick butter, softened
  • 1 1/2 cups pumpkin puree
  • 1 large egg
  • 1/2 cup raisins

Cooking Directions

  1. Preheat oven to 350.
  2. Line baking sheets with foil, and spray with cooking spray.
  3. Mix flour, baking soda, spices and salt in a mixing bowl.
  4. In a separate bowl, cream together brown sugar, and butter.
  5. Add in egg and pumpkin and mix until smooth.
  6. Gradually add in flour mixture.
  7. Fold in raisins.
  8. Drop by tablespoons full onto baking sheets.
  9. Bake for 16-18 minutes, then cool completely on wire rack.
